Usually we add a password to Excel and PowerPoint documents that contain very, very sensitive information. It is done in industry, but certainly not for every file.
Regarding locking sheets and protecting certain information from being changed by others, that's typically not how you work in a team:) I haven't seen it done many times in practice.
