Using more than a year is more accurate?

I actualy got this question in an interview, "how much data do you need to predict next year's supply, and what kind of data?" I said the more the better, but the inverviewer argued that they only need/use last year's. I said last year is not applicaple due to covid factor.
My question is, can one year data be accurate like you used in the example? Is regression appropriate in this case? How can you visulize the the trends of this data?
